Mexican Avocado Linguine

Ingredients:

  • 250g skinnypasta™ HIGH PROTEIN Linguine
  • 3 ripe avocados, halved and pitted
  • 1 cup black beans
  • 1 medium red onion, finely chopped
  • Lemon juice from 1 lemon
  • Lime juice from 1 lime
  • 2 garlic cloves, peeled and thinly minced
  • 1/8 tsp cayenne pepper
  • 1/2 cup extra virgin olive oil
  • Handful fresh cilantro, torn or chopped
  • 1/2 tsp coarse salt
  • Feta (optional)

Method:

  1. Take halved and pitted avocados and lightly brush with olive oil. Cook on BBQ or on the oven rack at medium heat, face down and with the peel still on. Remove avocados once they are nicely charred and softened. Set aside to cool until you are able to pick them up without burning your fingers.
  2. In a strong blender or food processor, add lemon and lime juice, cilantro, salt, cayenne pepper and one minced garlic clove. Add the cooled avocados, scooped out of their peels with a spoon. Puree the mixture while slowly drizzling in olive oil. Add more salt and lemon/lime juice to taste. The mixture should be thick.
  3. Meanwhile, in small sauce pan over medium heat, sauté the red onion and the other minced clove of garlic with a small amount of olive oil. Once the onion and garlic are soft, mix in black beans and leave on low heat to simmer.
  4. While the mixture simmers, bring water to a boil in a pot and add 250g skinnypasta HIGH PROTEIN Linguine to boiling water, gently stir pasta to separate and test for doneness after one minute, strain.
  5. Next, add the avocado sauce to the linguine in the pot by small spoonful’s, gently tossing with the pasta, coating each pasta strand. While tossing, add in the fresh basil and parsley leaves, with an extra pinch of salt and pepper.
  6. Serve with a large spoonful of the beans and onions placed on top, with extra cilantro and lemon and lime wedges for those who want an extra citrus kick. Ole!

Bought this to try out and was pleasantly surprised. The past was quick and easy to prepare and had a great taste. Love the fact that it comes in a high protein and gluten free options. I would recommend this to everyone to try out.

I got the High Protein Linguini - so yummy! Cooked up fast and very tender and toothsome with rich flavour. It was wonderful with sundried tomato sauce.

Great product! I love that it's both low calorie and high protein. The flavor is a little odd at first, but this is reasonable considering the difference in macros compared to regular pasta. It was easy to cook, I just followed the instructions, and my dish turned out great! With a pasta so high in protein, you really don't need to add so much extra protein to the meal, which was very convenient. With tomato sauce and veggies, this made for a very satisfying, healthy meal.

Thank you Socialnature.com for sending me this free sample! Would definitely buy again. I got the butternut squash ravioli and it was delicious. It's a really good healthy dinner when you're short on time, as it's very easy and quick to prepare. The pasta is gluten free, so the texture of the pasta was different from what I would normally eat, but it was nonetheless delicious. The butternut filling was flavorful, and enjoyable. Would definitely recommend to a gluten-free friend. The only thing that would. Make me hesitate to buy it again is the price, as it's quite pricey for a frozen meal its size. However, this is understandable considering the quality of the product and the fact that it is gluten free.
