Lemon-Cream Icebox Cake

  • 2 (8 oz.) tubs Green Valley Organics Lactose Free Cream Cheese
  • 6 oz. (half a tub) Green Valley Organics Lactose Free Sour Cream
  • 10 oz. lemon curd (one jar)
  • 1/2 cup freshly squeezed lemon juice
  • 2 tsp. cornstarch
  • 1 1/2 boxes Trader Joe’s Meyer Lemon cookies (or other thin wafer cookie) - for a 12-layer cake you will need 84 cookies


With a fork, stir sour cream, cream cheese and lemon curd together until smooth and silky.

Mix 2 tsp. lemon juice with the cornstarch.

Bring remaining lemon juice to a boil, add cornstarch mixture and boil for one minute while stirring vigorously. Let cool for 5-7 minutes, then carefully fold into cream cheese mixture.

To build the cake, place one cookie on the center of the serving plate. Place the other 6 cookies in a circle around it, with edges touching. (It helps to dab a tiny bit of lemon cream underneath each cookie to keep the cake from sliding around as you work.)

With a spatula, spread a thin layer of lemon cream over all cookies. Place another layer of 7 cookies on top of the first layer, offsetting the cookies, rather than stacking directly on top of each other. Continue layering cookies and lemon cream until cake is the height you like, finishing with a layer of lemon cream on top.

Place cake in refrigerator overnight.

I was a little apprehensive when trying Green Valley Organics Lactose Free Cream Cheese. I typically purchase Philadelphia products, however, I was surprised on how delicious this cream cheese was. I initially bought it for my brother who is lactose intolerant, but I use this spread on bread and crackers. It's so good!


I love cream cheese and this brand was really good! I was surprised. I can't have much lactose in my diet. This tasted great on my bagels in the morning and no issues with my tummy!


I must admit I’ve never had anything that was lactose free before but this is sooo similar to regular cream cheese I couldn’t tell the difference until I took a closer look at the package!


Since I am lactose intolerant, this is a great option and tastes great too with a perfect balance of tart and sweet flavors in a creamy and thick texture.


Who doesn't love cream cheese on a bagel? I have never had a lactose cream cheese before and I was surprisingly satisfied. Loved how creamy it was. Amazing how little the ingredients. I love that!
