Kale Artichoke Yogurt Dip
This fresh version is a playful twist on traditional artichoke dip, without the heaviness of mayonnaise and melted cheese, but with superb and complex flavors nonetheless. Chopped kale adds leafy green nutrition to the classic combo of yogurt, lemon and garlic. Try this at your next party or potluck—we promise your guests will devour it!
Prep Time: 20 minutes
4 cups kale, chopped
1 (14 oz) can artichoke hearts, drained well and chopped
3 green onions, thinly sliced
2 tsp. garlic, microplaned
2 cups Redwood Hill Farm plain goat milk yogurt
1 tsp. freshly ground pepper
1 tsp. salt
1 Tbsp. freshly squeezed lemon juice
If desired, refrigerate dip for at least one hour, to allow flavors to develop, or serve immediately. try serving the dip in a bread bowl, which creates a beautiful and colorful contrast, and to accompany with crackers, corn chips and fresh vegetable sticks.
My kids thought that taste wa great and at first were skeptical but quickly changed their tone with one bite! It will be something we buy on a monthly basis as a great after school treat!

So I was very scared to try this at first because it's goat milk, and I'm more accustomed to the thickness of Greek yogurt. I hardly ever even eat regular yogurt anymore because it's too loose. So I tried this by adding a packet of splenda because I got just the plain flavor, as I don't like flavored yogurts. I added a few blueberries and I was ready to dig in. It was not thin like normal yogurts but of course not thick like Greek yogurt. However the taste was actually quite pleasant. It had a nice twang yet sweetness to it. I wish there was a low fat option for this, but I would definitley try this again.
I tried my sample of the blueberry flavored Redwood hill farm's goat milk yogurt with granola for breakfast. I loved it and it totally transported me back to being a kid and having homemade goat yogurt (mom had three milking does). This yogurt had the tang and creaminess that I remembered.
